Ingredients

  • Equal quantities of dried tamarind and dried dates
  • Boiling water
  • Salt, sugar and chilli powder to taste

Method

  • Soak the dates and tamarind in boiling water so it comes up to 2 in. above the solids.
  • Leave overnight.
  • Rub the mixture through a sieve with a wooden spoon and add salt, chilli powder and sugar, tasting all the while so you end up with a well-balanced sweet/sour/hot sauce.
