  • 2 cups raw cashews, peanuts or blanched whole almonds, or all mixed together
  • ½ tsp salt


  • Rub the oil into the nuts and roast in the oven (at medium temperature – 325°F, 170°C, gas mark 3) until light brown – about six to eight minutes.
  • Remove and drain on thick sheets of kitchen paper.
  • While the nuts are still hot, mix in the chilli powder and other flavourings.
  • Cool and store in airtight containers.
