  • Chicken bones
  • 1 tsp garlic/ginger paste
  • 6 whole peppercorns
  • 2 chopped fresh red chillies
  • A variety of vegetables that need using up (frozen stuff works too)
  • 2 oz butter


  • Boil all the bones with a mixture of carrots, potatoes, peas, beans, spinach, anything really, plus a teaspoon of crushed garlic/ginger mixture and whole peppercorns.
  • Strain the soup.
  • Throw away the bones or give them to teething babies.
  • Melt the butter and, when it starts to turn brown, fry the vegetables at high heat, throwing in chopped red chillies. Mush up.
  • Serve broth in a bowl. On a side plate pile up the veg on thick wedges of baguette. This is just brilliant on those days when you have a sore throat or no will to live.
