Ingredients

  • 1 large cauliflower broken into small sprigs

Batter

  • 8 oz gram flour
  • Bicarbonate of soda
  • 1 tsp chilli powder
  • 1 tsp turmeric
  • Cold water
  • Salt
  • ½ tsp cumin seeds
  • ½ tsp ajwain seeds
  • Half a lime
  • Oil to deep-fry

Method

  • Sieve the gram flour into a bowl and break up any lumps.
  • Add all the spices, then lime juice and water a little at a time until you have a thick pancakey batter.
  • Stir in cauliflower, then leave for an hour.
  • Add a pinch of bicarbonate of soda.
  • Heat the oil and test that a drop of batter rises quickly.
  • Spoon dessertspoons of the mixture into the fat then turn over several times for about three to four minutes.
  • Drain on kitchen paper.
