  • peel of 2 grapefruit
  • 8 oz (225 g) granulated sugar

Method

Remove the peel from the grapefruit in quarters. Place in a saucepan and cover with cold water. Bring to the boil and simmer for 10 minutes, then drain. Re-cover with cold water and repeat the process three times in all. Drain the peel and cut into thin strips.

Measure the sugar, golden syrup and water into a saucepan. Stir over low heat to dissolve the sugar. Add the peel and bring up
