Bitter and salty foods often go very well together and here the slight bitterness of rapini (also known as broccoli rabe) complements the savoriness of pork sausage. Use either the homemade sausage or a plain pork sausage with as few spices as possible.

Ingredients

  • ½ pound pork sausage
  • 5–6 tablespoons extra-virgin olive oil

Method

  1. Fill a pot large enough to hold the rapini with water, cover, place over high heat, and bring to a boil.
  2. Fill a pot for the pasta with about 6 quarts of water, place over high heat, and bring to a boil.
  3. If using sausage links, remove the casing. Put the sausage in a 12-inch skillet with ½ cup water and place over medium-high heat. Break the sausage up
