If you like the idea of making cheese, then a simple, drained curd cheese is the perfect starting point — it’s easy and requires no specialist equipment or ingredients. Paneer is a delicate, milky, soft cheese, often used in Indian dishes. It can also be cut into cubes or crumbled over salads, pizzas or tagines, or used as part of a filling in savoury filo or puff pastry parcels. Shop-bought paneer tends to have a firmer texture and is good stir-fried until golden.
