The purpose of this eclectic collection of recipes is two-fold-some of the recipes form the foundation of dishes contained within the main chapters, while others are accompaniments that will embellish and enhance meals. For instance, no kitchen should be without a good, staple vegetable stock recipe.

It is the base for many recipes in the book and can be stored portioned in the freezer.
