Meat Loaf Filled with Buckwheat Grits

  • Meat loaf, prepared as above.
  • 1 cup buck wheat grits
  • Salt
  • 2 cups water
  • 3 tablespoon butter
  • ¼ lb. crisp chopped bacon
  • 2 tablespoon flour


Wash grits and cook in double boiler with water, salt and bacon until tender. Carefully roll the meat on board to one inch thickness and fill center with grits. Roll into loaf, dredge with flour and brown quickly in butter. Bake 30 minutes in 400° oven.
