  • White meat of turkey
  • 3 egg yolks
  • 1 tablespoon butter

Method

Separate the cooked white meat from bones. Chop very fine through food grinder. Add egg yolks, butter and seasoning. Form into cutlets. Place in buttered baking pan and roast in 375° oven for 15 minutes When they brown on one side, sprinkle with lemon juice and turn. Serve with mushroom sauce and buttered green peas.
