Young Chicken with Gooseberry Sauce

  • 1 broiler, quartered
  • ½ teaspoon sugar
  • 1 tablespoon butter
  • ½ cup under-ripe goose - berries
  • 1 tablespoon flour
  • 1 cup chicken stock


Cook chicken as above in recipe for Young Chicken Polish style. Heat butter, add flour and thin with chicken stock. When thickened, add sugar and the gooseberries. Bring to boiling point, add chicken. You may prefer the sauce strained.
