Crappies in Horseradish

  • 6 crappies
  • ½ cup cream
  • ½ cup butter
  • Salt and pepper
  • ¼ cup horseradish


Place a layer of fish in kettle. Cover with butter, horseradish and cream. Season to taste. Cover with another layer of fish and simmer gently until tender. It is inadvisable to cook more than two layers at one time. Do not overcook—crappies are tender.
