Whole Young Carrots

Ingredients

  • 12 young carrots
  • 1 cup meat stock
  • 1 tablespoon butter
  • 2 egg yolks
  • 1 tablespoon sugar
  • Salt

Method

Scrub and scrape carrots. Melt butter in kettle, add carrots, sugar, salt and meat stock. Cook covered until tender. Beat egg yolks and add to carrots. Heat through but do not boil.
