Creamed Mushrooms

  • 1 lb. mushrooms
  • 1 cup sweet cream
  • 4 tablespoon butter
  • 2 tablespoon sherry
  • 2 tablespoon flour
  • Salt and pepper
  • ½ cup chicken stock


Slice mushrooms and saute in 2 tablespoons of butter for 10 minutes. Heat rest of butter, add flour and when smooth, add chicken stock and cream. Season. Bring to boiling point and simmer for 5 minutes. Add cooked mushrooms. Pour sherry into the mushroom frying pan to catch all the browned butter and add to other mixture. Serve on toast.
