Scald milk and cool to lukewarm. Break yeast into milk. Add to flour, beat well and set aside to rise. Beat eggs with a tablespoon of sugar. Add to beaten yolks, butter, sugar and salt. Beat thoroughly. Fold in egg whites. Add 2 cups of flour and beat with spoon until the dough no longer sticks to the spoon. Let rise again. Cut pieces of brown paper 5x3 inches. Rub paper with butter and stretch a tablespoon of dough on each. Fill with your favorite filling, fold paper so that filling is enclosed and let rise. Bake for half hour in 350° oven. Remove paper, arrange on platter and serve with melted butter or any of the other pierogi garnishes, depending on the filling.
