Lemon Torte

  • 5 eggs
  • ½ teaspoon salt
  • 1 cup sugar
  • 2 tablespoon lemon juice
  • cup water
  • 1 teaspoon lemon rind, grated
  • 1 cup cake flour


Beat whites until stiff but not dry. Boil sugar with water to soft ball stage and slowly add to beaten whites. Add salt, lemon juice and rind to egg yolks and beat until thick and lemon-colored. Combine with egg white mixture carefully. Fold in the flour. Pour into tube pan, set into cold oven, and bake 35 minutes at 350°.
