Pastry Fingers



  • 1 lb. butter
  • 4 cups flour
  • 1 lb. dry cottage cheese
  • ½ teaspoon vanilla


Put cheese through grinder. Mix with soft butter and flour, first cutting in with knife, then lightly kneading. Make little balls the size of walnut and set in refrigerator over night. Roll each ball until very thin. Fill with any of the following mixtures: cottage cheese, dates, prunes, poppy seed or thick jam. Seal edges and make small rolls. Bake in 350° oven until light brown, about 15 minutes. Sprinkle with powdered sugar.
