  • 3 lbs. strawberries
  • ½ pint rum
  • 6 lbs.

Method

Hull and clean berries. Choose large select berries. Line a porcelain or earthen dish with a layer of berries, cover with sugar and spray with rum and let stand over night. The next day bring the berries to a quick boil on a hot fire, skim and let cool. Repeat this process of quick boiling three times. Cool and pour into sterilized jars. Will keep indefinitely.
