As its name indicates, these apples are clothed in a sheet, or “shirt”, of pastry. The jam provides the right amount of sugar. Eat this slightly warm, either plain or with whipped cream.
Make the pastry following the instructions. Cover and leave the pastry to rest for 30-60 minutes before rolling out.
Peel, halve and core the apples. Cut each half into about eight slices. Sprinkle with a little lemon juice if you are preparing them ahead of time.
