This wonderful Mediterranean fruit makes its yearly debut around September and doesn’t last all that long, so home cooks always make sure that some of the fruit is preserved for later months. Figs require less sugar than other fruits, as they are very sweet. Giovanna boils her figs in a little water, cools them slightly, then presses the figs through a very fine sieve to eliminate almost all of the seeds before continuing with her jam.
