Red Beetroot Puree

  • Unsalted butter 25 g
  • Red beetroot, peeled and finely sliced 500 g
  • Milk

Method

Red Beetroot Puree

Melt the butter and add the sliced beetroot, season, and cook until the beetroot breaks down; add the milk, and cook until the beetroot is soft.

Remove the pan and cook slightly before pureeing in a food processor. Check seasoning and place in a piping bag. Keep warm for service.
