Method

Aspic

Peel the vegetables and bake them in the oven or in a dry frying pan. Place into a large pan with the rooster and spices and pour in cold water. Bring to the boil, skim and simmer for a minimum of 3 hours on a low heat. This way the broth should remain clear. Add the gelatine until disolved.
