Method

Combine flours and salt. Pour flour mixture onto clean kitchen counter and mound into a pile. Make a well in the center of the flour. Add eggs to well. With a fork, stir the egg with the flour, starting near the well and slowly working in more and more flour. Add water as needed, until the pasta dough is combined and easily kneaded. Knead by hand until the dough comes together in a smooth ball.
