Although I prefer to savor the supersweet, pudding-like atemoya (or cherimoya) right from the skin, I have found that I may be in the minority. This whipped-cream concoction retains the flavor of the lush fruit, but lightens its somewhat dense texture. You might think of this as a luxurious (and generous) midnight snack for two, or a post-meal delicacy for four. In either case, know your company: the fruit is so expensive that you will want to be sure of its reception.
