This tender jelly adds gloss, color, and a bittersweet taste to a tart—or to morning toast. Choose the darkest-skinned oranges for the most vivid hue.

Ingredients

  • Peel from 3 blood oranges, coarsely cut
  • About 3 cups water
  • ¼

Method

  1. Combine peel and water to cover in small, heavy nonaluminum pot. Boil gently until peel is tender—about 40 minutes. Drain liquid and measure; there should be a little less than 1 cup. If there is more, boil a few minutes to reduce. Discard solids.
