The easiest way to prepare gooseberries for use in any dessert is to cook them for a few minutes in sugar syrup. Once chilled, they firm and plump, ready to be incorporated into fruit compotes, drained and placed on a pastry-cream-coated tart shell, spooned over shortcake biscuits, or gingerbread and cream, used as garnish with smoked meats, or served in a small amount of syrup with vanilla ice cream or heavy cream.
