Fruits poached in wine make a delicious tart-sweet finish for a fall meal. The monochromatic mixture is perfectly complemented by the mellowing effect of cream and by its whiteness. Try to find a real cream—not ultrapasteurized or thickened; it makes all the difference.

Ingredients

  • 1 cup plus 1 tablespoon sweet or semisweet white wine—the more aromatic the better

Method

  1. Combine 1 cup wine, raisins, and 3 tablespoons sugar in a nonaluminum saucepan. Bring to a boil, then cover and simmer gently for 5 minutes.
