When boiling hot, sweet dressing is poured over mustard greens, it softens the texture and modifies the bitterness. (If they still remain too strong for your taste, however, try combining them with lettuce and other milder greens.) Although both Southerners and Pennsylvania Dutch include such dressings in their repertoire, this recipe is taken from neither—being lighter and less sweet.
