Those who are fond of glacéed fruit peel will be delighted with this exquisite confection. Paler, more fruity, less bitter than grapefruit peel, the candy has a sugar-crusted exterior and transparent, unusually tender interior. The peel from one pummelo yields a full 114 pounds of candy. Serve with after-dinner coffee and brandy.

Ingredients

  • 1 large pummelo (about 16 inches in circumference)

Method
