Honey-Baked Quince Slices

Baked to a rich pink-gold, this quince dish tastes like intensified apples, but less juicy. Serve the slices with cream, for dessert; or as an accompaniment to smoked meats, fowl, or pork. The fruit is at its best warm or at room temperature, not chilled.

Ingredients

  • 4 medium quinces, about 2 pounds
  • 4 tablespoons fragrant, light honey

Method

  1. Quarter and peel quinces. With melon-ball cutter or very sharp knife, remove the entire core area, being sure no hard bits remain. Cut each quarter lengthwise into 4 slices. Arrange the slices closely overlapping in a baking dish about 7–8 inches wide and 10–12 long.
  2. Drizzle honey evenly over slices to coat them; sprinkle with lime juice and water. Cover closel
