Light and soft, this fresh-tasting dish of palest rice and tart cherries will be adored by some, considered strange by others. The fluffy grains, particularly tender in this treatment, are tinted party pink and yellow from the cherries and saffron. It is a festive complement to poultry and vegetable main courses.

Ingredients

  • 2 cups long-grain white rice (see Note)
  • 1 tablespoon salt

Method

  1. Wash rice by swishing in a bowl of water. Drain and repeat twice. Dissolve salt in enough water to cover rice by an inch. Soak 1 hour or longer.
  2. Bring 6 cups water to a boil. Stir in rice and soaking water. Bring to a boil, stirring. Boil about 5 minutes, or until kern
