While this is an easy and thoroughly rewarding way to prepare either green or ruby Swiss chard, the ribs of the latter turn a garnet-russet that looks particularly appealing among the velvety green leaves.

  • 1¾-2 pounds Swiss chard (see Note), washed, trimmed, leaves and stems separated (see Preparation)
