Once you have a basic vegan mayo recipe, the possibilities are limitless. For garlic mayonnaise, simply add 1 tablespoon of garlic paste or ¾ tablespoon of freshly minced garlic. Or for a bright green and pungently sensational version, add a handful of wild garlic, finely chopped.

Ingredients

  • 3 tbsp aquafaba (from cannellini beans)
  • 1 tsp English mustard

Method

  1. Measure the aquafaba into the small cup compartment of a bullet blender.
  2. Add the mustard, salt and pepper and blitz to combine. Add the vinegar and oil, and pulse for a minute, until the ingredients combine and emulsify to make a thick white mayonnaise. If it doesn’t come together for you – and sometimes, it just doesn’t – add
