This caramel sauce may sound unusual, but miso is a staple flavour in both vegan and Eastern diets, adding a baseline of savoury notes known as ‘umami’ to a variety of dishes. Salted caramel has been in foodie fashion for around a decade now, straddling that border between completely ordinary and passé – so I’ve updated it here with a delicious twist.
