Until I was writing this book I had no idea what these were called. I would just point at it in the bakery window and ask for ‘the layer cake thing’. In researching how to make these, and then working out my own vegan versions, I had to learn how to not only make them, but also how to spell them, and how to pronounce them. It’s ‘mee-fwoy’, or as near as damn it. I tend to use Jus-Rol or supermarket equivalents on busy days, because life is short, and most ready-made pastries are both vegan and foolproof. These are utterly delightful.
