Sliced, spiced, and braised, okra is quite different from the whole and perky vegetable, softening to a sauce-like consistency. Tomatoes, chilli, and cinnamon are traditional Middle Eastern enhancements for this stewy style, which I like to freshen with mint and parsley Fennel, Orange, and Green Olive Salad with Lemony Dressing makes a fine foil for this vegetarian main dish.

Technically, bulgur wheat has been precooked whereas cracked wheat is raw, but packaging information does not always make this clear. If you cannot find cracked wheat, substitute coarse-grain bulgur wheat.
