Handsome and curvaceous, juicy king oyster caps suggest pheasant breast (a fine feathered accompaniment indeed) while the stems resemble firm scallops (another possible complement). I find the mushrooms too solid and fleshy to serve “straight” and prefer to combine them with brightening and lightening vegetables, such as fiddlehead ferns, baby corn, tiny carrots, or sugar snap peas.
