Ingredients: 2 Nori Strips, halved; 2 cups Cooked Sushi rice; Sushi reduction; ⅔ cup Wine vinegar; 1¾ tbsp Rice wine; 2 tsp Sake; 2.5 tbsp Sugar; 1 tsp Salt; 2 each Lobster meat, cooked, tail cut in half lengthwise, cut in two; 4 slices Pickled Ginger; 4 tsp Japanese Cucumber, matchsticks; 2 Scallion, sliced on the bias; 1 cup Sour Cream; 2 tbsp Wasabi; 8 Popcorn shoots; 8 Micro cilantro; 2 tbsp Black garlic, peeled; ¾ tsp Horseradish; ¾ tsp Grain mustard; ¾ tsp Lime juice; ⅔ cup Garlic Aioli

Method

Combine the rice wine & vinegar, sugar, sake, sugar & sell in a bowl until dissolved. Add reduction to the cooked rice & stir to combine.

Make Wasabi Sour Cream - Combine ingredients in a bowl.

Black Garlic Aioli - Add Black garlic, horseradish, grain mustard & lime juice in a food processor. Pulse to combine. Fold in the Garlic Aioli. Season, S/P to taste.
