Heat oil in a large roasting pan, add lobster shells & roast in 350°F oven until lightly browned.
In a separate pan, heat oil & sauté vegetables until they caramelize. Add tomato paste herbs & cook out the paste’s tartness, avoiding scorching. Deglaze the pan by adding the wine & brandy, & cook-off the alcohol. Add the lobster shells & cover with chicken stock. B
