Smoking food is an ancient means of preserving it. In modern times, we are more inclined to smoke food to add flavour. If we only considered smoking carrots to preserve them, then we would use cold smoke so that the carrots remain raw. Here, however, we are interested in both smoking and cooking the carrots at the same time. That calls for hot smoke plus supplemental heat since the carrots must reach 85°C (185°F) in order to cook.
