Blind bake a tart shell. I think this works best with 10 cm (4 in) round tart pans rather than larger ones. You can either make a normal tart crust or puff pastry from scratch or purchase a frozen one. In either case, make sure the baked crust has cooled before adding the carrot cream. The carrot cream can be added hot out of the sauce pan or spooned in later after it cools. If added hot, the tart should be refrigerated until the carrot cream is cool.
