My grandmother used an upside-down glass to cut her biscuits. They were flakier than mine, but they didn’t quite work for sandwiches, so I created this recipe, borrowing from a few places, so that I could make a biscuit sandwich. They are sturdy. I make them with cream, and you can fill them with jam, or sausage, cheese, and egg, or both, or nothing. Now I sell about two dozen of them every day.
