  • 1 medium onion, cut into thin slices


In a large saucepan, heat the oil over medium-high heat and add the onions. Sweat the onions until soft and translucent, about 5 minutes.

Purée the tomatoes, chipotles, and garlic in a blender. Add the purée to the pan with the onions. Bring the sauce to a simmer, lower the heat, and cook until it thickens slightly, 2 to 3 minutes.
