This recipe is inspired by Mazurek, a sweet, flat Polish Easter cake made of shortcrust pastry, topped with jam, or maybe some chocolate, dulce de leche caramel or “kajmak,” nuts, and dried fruit. This version is reminiscent of a chocolate caramel Mazurek (Mazurek Kajmakowy-Czedoladowo), available at one of my favorite cafes in Warsaw during the spring. It is similar to a millionaire’s shortbread, comprising a layer of buttery brown sugar cookie, dulce de leche caramel
