When I had just started university, my friend Maya had a surplus of fruit in her possession, courtesy of her father. I and several other of her friends were the fortunate recipients of succulent French plums. I decided to combine the fruit in a cake, along with ricotta cheese, olive oil, and lemon zest (things I already had in the fridge).
