Another book with cauliflower cheese in it - boring. Well, I hope not. This one has big shards of smashed crispy Cheddar jutting out of the browned saucy cauliflower. Squint at it and miniaturize yourself, an explorer mountaineering across this dramatic cheese landscape.
If any of the cauliflower leaves appear a little grizzled, snap them off and discard them. Snap off the remaining leafy stalks, but keep them with the cauliflower. Split the cauliflower with a knife, dividing it up into about eight large pieces.
Put a pan of salted water on to boil. Once the cauliflower and stalks are in the water, let it come back to the boil and cook it for 5 minutes.
