I always order this in a Japanese restaurant if it’s on offer. The recipe is truly superb, a good thing to do to an aubergine and a real umami blast-off. It’s a fine ambassador for the banquet of vegetarian deliciousness that can be found across the globe. It’s just the British concept of vegetarianism that is often so depressing. Lost for a simple lunch idea? Ditch the pasta salad and head for this!
