  • ½ head cauliflower, roughly chopped
  • 2 eggs, lightly beaten

Method

What to do

  1. Cook the cauliflower for about 15 minutes in a saucepan of salted boiling water until tender. Remove from the heat, drain and set aside to steam for a few minutes (if you have a steamer, cook the cauliflower that way).
  2. Add the cauliflower to a bowl and blend using a stick blender – the röstis hold together better when the mixture is left
