  • 1–2 Tbsp Thai red curry paste

What to do

  1. To a large saucepan over medium-high heat, add the olive or coconut oil and fry the curry paste until fragrant. Add the ginger and garlic and cook for another minute before adding the coconut milk and stock and bringing it to a gentle simmer.
