Cheesy Aubergine Parmigiano

This is along the lines of a traditional parmigiano, but if you wish to layer different vegetables such as courgettes, spinach or mushrooms, you can create a delicious vegetable bake. It’ll only get better because of all the nutrients you’ve packed in.


  • 1 large brown onion, chopped
  • 1 clove garlic, minced
  • 2–3 teaspoons <


In a medium-sized saucepan over medium heat, add the onion, garlic, rosemary and 1 teaspoon coconut oil and fry until translucent. Add the plum and cherry tomatoes, basil and passata and mix well. Cover with a lid and simmer for 1–1¼ hours. Season to taste.
